01 — THE HOUSE
Twelve seats around one charcoal grill.
Chochin is a small izakaya tucked down a few steps on a quiet East Village block. The master grills over binchotan charcoal, one skewer at a time, while the sake list changes with the season. Come early for the counter, or late for the last pour.

03 — THE MASTER
“Charcoal does not hurry. Neither do we.”
Kenji Arata trained for eleven years in Tokyo before lighting his own lantern in New York. Every bird is broken down by hand each afternoon, and every skewer is turned by the same pair of hands until close.
